What it is about

We are convinced that the future of good nutrition will consist to a large extent of organic and regional products.
Our project region around Lake Constance already has the highest density of organic farms in the world! In private, many people already reach for such products, but in communal catering, i.e. in canteens and dining halls, the offer is still quite small.

With a multi-perspective and transdisciplinary approach, the OPG develops appropriate strategies to increase the regional organic share in state-owned canteens to 30-40% by 2030, and to reduce food losses. In the OPG the entire value chain is represented. The project aims at closing the gap between regional organic agriculture and out-of-home consumption by orienting processing to specific market needs and developing expanded sales markets for selected vegetables (carrot, potato, pumpkin, lentil) in the communal catering districts of Lake Constance, Ravensburg and Constance.

Following market and potential analyses, the core of the project will involve participatory research into where optimization potential lies. Services and innovative technical processes will be partially realized as prototypes in the project. Concrete recommendations are expected on how more of these regional organic products can be used in out-of-home consumption in the future.

What we want to achieve ...

In cooperation with the entire knowledge and value chain, the following goals are to be achieved:

  • Analysis of the obstacles, hurdles and also the chances for an increase of the share of bio-regional agricultural products in canteens and cafeterias.
  • Status quo analysis on the use of organic and regional food in state-owned canteens in our project region
  • Bundled overview of the state of knowledge and previous experiences from similar projects
  • Exploration of the scope for increased use of carrot, pumpkin, potato and lentil in public canteens, considering the DGE guidelines (Deutsche Gesellschaft für Ernährung
  • Increasing knowledge and understanding of the reduction potential in food losses along the entire value chain and actual implementation opportunities
  • Design of recommendations for the different sectors of the value chain (competitive requirements for procurement, services, technical infrastructure, etc.)
  • Realization of individual pilot projects to test the solution approaches
  • Developing new customer groups for organic products from the region and thus securing the future of agriculture, promoting social innovations, contributing to the socio-ecological transformation of society.
